🌈 Kuih Lapis: Layered Perfection, One Colour at a Time

Beautiful, bouncy, and brightly layered — Kuih Lapis is one of Malaysia’s most iconic desserts. Whether you peel it layer by layer (we won’t judge!) or eat it whole, this steamed treat is as fun to make as it is to eat.

Here’s a step-by-step guide to creating this colourful classic at home.


🧾 Ingredients:

  • 1 cup rice flour

  • ½ cup all-purpose flour

  • ½ cup tapioca flour

  • 1 cup sugar

  • 2 cups coconut milk

  • 1 cup water

  • A pinch of salt

  • Food colouring (traditionally red, pink, green, or purple — your choice!)


🍲 Method:

1. Prepare the Batter:
In a large bowl, mix all flours, sugar, salt, coconut milk, and water until smooth. Strain the batter to remove lumps. Divide evenly into 2–4 portions, depending on how many colours you want.

2. Add Colours:
Add different food colouring to each portion. Keep one layer white if you like contrast.

3. Steam the Layers:

  • Grease a square or round pan lightly.

  • Steam each coloured layer for 4–5 minutes before pouring the next.

  • Continue layering until all batter is used.

  • After the final layer, steam for another 15 minutes to fully cook through.

4. Cool & Slice:
Let kuih cool completely before cutting. Use an oiled knife for clean slices.

  • Use a ladle or measuring cup to ensure even layer thickness.

  • Don’t rush — let each layer fully set before adding the next.

  • For fun: try ombré colours or pastel tones for a modern twist.
